Chinese Fish Rolls





Fish rolls is a delicious tea time snack. Even though it is a bit of a task this recipe tells you a easy method of making rolls at home.

Ingredients :

For The Filling

Smashed Potatoes 3
Boiled smashed fish 150g
Grated Carrot 1
Ginger Garlic paste  1Tbsp
Cinnamon 1/2 inch piece
Black pepper powder 1/2 Tsp
Turmeric powder 1/2 Tsp
Red Onions 10
Cardamom , Cloves,Garlic
Chopped Curry leaves
Chopped Green Chilies
Cumin Seeds
Salt


For The Pancake

Wheat Flour - 3 cups
Corn Flour - 2 Tbsp
Salt 1/2 Tsp
Water 1 cup
Eggs 4
Bread Crumbs


Method :

Filling

Heat a pan add some oil.Add  cumin seeds , ginger garlic paste and fry for 1 minute. Add chopped onions, curry leaves,cinnamon and cook until the onion become brown.Then add cloves and cardamom. Fry for another 1 minute.Add turmeric powder and keep for another one minute.

Mix the smashed potatoes and smashed fish properly. If the fish is not available you can use the canned fish or Salmon.Mix salt, chopped green chilies,Pepper powder to the fish and potato mixture. Mix the ingredients properly and add it to the fried onion mixture. Fry the mixture until it combines well.Keep it aside.

Pancake

Mix  the flour, corn flour, 3 eggs,salt and water. Mix it well until it become  a lump free smooth mixture.Heat a non -stick pan . Add  spoon  of  ladleful of  the batter into the pan and swirl to coat the base.Heat it for one minute until it is loose enough to take out from the  pan. Remove it from the pan. It should be soft enough to fold without tearing.Repeat for the remaining batter.


Making the Roll

Lay the pancake on the work surface and place a small amount of the filling in the middle.Fold from the edges and roll it to cover the filling in full.Use water or little bit of egg to stick the edges. Repeat for the remaining pancake and filling.

Dip the each roll in the beaten egg.Remove excess and coat in the bread crumbs. Repeat for the other rolls as well.Heat some oil in a pan and deep fry the rolls in batches until it become crispy and golden brown.Serve  it in hot with some ketchup.
