Kurakkan (Ragi) halapa is a tasty Sri Lankan sweet which is suitable for the tea time. This is made out of kurakkan flour and kithul treacle or jaggery and wrapped by a special leave called ' Kenda leaves'. The halapa dough is flatten on the kenda leave to absorb the taste of the leave to the halapa.
Kurakkan is a type of Millet which is good for diabetics and it is ideal for weight loss as well.This is the traditional recipe to make the halapa.
Ingredients :
Kurakkan Flour 150g
Kithul treacle 1/2 cup
Scraped coconut 1 cup
Salt 1/2 Tsp
Kenda leaves 10
Method :
Mix the flour with salt. Add the scraped coconut to the flour and mix well. Heat a pan and heat the kithul treacle. Add flour mixture gradually to the kithul treacle and make a soft dough.Add a little bit of hot water gradually and mix it until it become a creamy soft dough.Then take a small amount of the dough and make a small ball. Keep the ball on the side of the kenda leaf and flatten it.Then cover the dough by the other side of the leaf .Roll it until it become a thin layer and paste to the leaf.Repeat this until the dough is over.
Put all these halapa into the steamer and steam for about 10 minutes. Let it cool slowly and serve.
