Welithalapa




Welithalapa is a traditional Sri Lankan sweet which is made out of rice flour and Kithul treacle.That has been used as a main sweet especially in the new year festival. This is made out of Piitu.


Ingredients :

Rice Flour - 250g
Salt - 1/2 Tsp
Freshly scraped coconut -  3/4 cup
Grated Kithul jaggery  or Kithul treacle - 200g
Brown sugar - 150g
Cardamom powder - 1/4 Tsp
Salt - 1/8 Tsp
Water


Method :

In a pan slightly roast the rice flour.Slightyly roast the coconut also.Let it cool for some time.In a bowl mix salt and scraped coconut. Add flour little by little  into the coconut and curdle it until it makes little lumps.Add little bit of water to keep the moisture.Curdle the mixture well until the flour mixture become coarse and grainy.Transfer the flour mixture into the pittu bamboo  and steam for 10 minutes.

Once it is steamed break the pittu into small pieces.In a pan heat the grated jaggery and  1/2 cup of water to become a become a thick flowing consistency.If you are using treacle heat for some time.Add the brown sugar and stir well until it become treacle. Add the cardamom powder to the mixture.Add the flour to the jaggery mix and stir well while keeping on the stove.When it is become a sticky dough lower the flame and keep on stiring. After 2 - 3 minutes put the mixture to a greeced tray and flatten the top.Thickness should be 1 cm.Keep for 2 -3 minutes to become cool and cut into squares.
