Ingredients :
For The Bun
Wheat flour 500g
Sugar 100g
Margarine 50g
Salt - 1 Tsp
Yeast - 1 Tsp
Milk Powder - 35g
Egg -1
For the Filling
Fish or Canned fish - 250g
Boiled Potatoes - 250g
Chopped Onion -1
Chili Flakes -1/2 Tsp
Pepper - 1tsp
Salt - 1Tsp
Cloves, Cardamom, Cinnamon powder- 1/4 Tsp from each
Turmeric Powder 1/2 Tsp
Ginger and garlic paste - 1 Tbsp
Lime juice - 1tsp
Green chili
Oil
Curry Leaves
Method :
The dough
Take 3 tbsp of luke warm water and add sugar and yeast.Mix it well and keep to bloom for 10 minutes. Mix the salt to the flour . Add margarine and mix well.Make a whole in the flour mixture and pour the bloomed yeast and mix well.Add the milk powder and the egg.Add the 1/2 cup of cool water gradually and mix the dough well.In order to kneed the dough spread some floor on a flat surface . Kneed the dough slowly for 10 -12 minutes until it becomes a soft, stretchable dough.Cut the dough into pieces which are weight for 65g- 70g. Make the balls and cover it by a damp cloth.keep for 30 minutes until it become double in size.
The Filling
Heat a pan and add some oil . Add chopped onions,curry leaves, cardamom, cloves,cinnamon, ginger and garlic paste. Fry for 2 minutes . Add chili flakes and turmeric powder and mix well.
Smash the boiled potatoes and boiled fish or canned fish. Mix salt, pepper and chopped green chilies. Finally add fish and potato mixture to the pan and combine all the ingredients well. Add lime juice after taking out from the stove.
The bun
Take the each dough ball and roll it using a rolling pin.Put a part of the filling on the middle and fold it to make triangular shape.Place the fish bun on the greeced baking tray and keep for another 30 minutes to become double in size. Cover the tray with a lunch sheet.
Pre heat the oven. Egg wash on top of the buns after it become double in size.Bake the buns at 200C -210C for 15-20 minutes. After it is baked apply some butter and serve.
