Biscuit pudding is a delicious Sri Lankan dessert made out of alternate biscuit layers with chocolate icing.This a very simple no - bake dessert which can be prepared quickly and with easily available ingredients.
Ingredients :
Marie biscuits 200 g
Icing sugar 300 g
Butter or Margarine 250 g
Cocoa Powder 50 g
Vanilla 1 Tbsp
Red Wine 1 Tbsp
Instant Coffee 1 Tbsp
Fresh Milk 300 ml
White Chocolate 75 g
Cashew nuts
Method :
In a bowl add sugar and butter. Beat it until it become a creamy consistency.Add chocolate powder , vanilla and red wine. Beat all the ingredients well to become a thick cream.
In another bowl mix instant coffee and milk in order to make a milk coffee.
In the pudding tray put a plastic wrap and spread a chocolate icing layer. Then soak the biscuits in the milk coffee and place a biscuit layer on top of the icing layer.Spread another icing layer on top of the biscuit layer.Place the biscuit layers alternate with the chocolate icing.Once the mixture is over refrigerate for 2 -3 hours.
Melt some white chocolate using the double boil method.After 3 hours take the pudding out of the fridge and remove the plastic wrap.Pour the melted white chocolate on top of the pudding. Sprinkle some chopped cashews to decorate the pudding.
