Passion Fruit Cake



Passion fruit is a tropical fruit grown  all over the world which has a hard rind and juicy- filled seeds .It has many varieties but the purple and the yellow are  the most common varieties.Passion fruit is rich with nutrition such as Fiber, Vitamin C, Provitamin A.It also high in beneficial plant compounds such as Carotenoids and Polyphenols. A cake mixed with passion fruit gives a delicious and  nutritious experience to you. 

Ingredients :

For the Cake

Wheat flour  -   300g
Eggs -3
Sugar - 220g
Butter -250g
Butter Milk - 1 cup or ( 1 cup of milk mixed with  1 Tbsp lemon juice )
Passion fruit juice - 2/3 cups (160ml)
Baking powder - 1 1/2 Tsp
Baking Soda - 1/2 Tsp
Salt - 1/4 Tsp
Vanila - 1Tsp

For the Passion fruit syrup

Passion fruit juice - 2Tbsp (with seeds)
Sugar - 1/4 cups


Method :

Sift wheat flour, baking soda,baking powder and salt together.Beat white sugar and butter until it become a fluffy and white colour cream. Gradually add eggs , beating well after each addition.Mix the passion fruit juice with butter milk and  make a thick milk. Add Vanila also to the  cream mixture.Add the sifted dry ingredients to the cream mixture alternatively with passion fruit milk.Fold the mixture properly.Pour the mixture to a cake tray ( 9'x9') and bake the cake at 180 Celsius for 35 minutes.

In order to make the syrup , mix the passion fruit juice with sugar and heat it in the low flame until it become a thick syrup.

Once the cake is baked let it  cool for about  5 minute and spread the syrup on top of the cake evenly.Cut the pieces and serve.
