This is a famous bakery food in Sri Lanka. It is also known as 'Viyana Rolls'. We could say this is a local attempt to imitate the croissants and the result is a type of bun.However this is a perfect bakery food which is ideal for the tea time.
Ingredients :
For the bun
Wheat flour 500g
Margarine 25g
Condensed milk 75g
Salt 7.5g
Yeast 7.5g
Cold water 275ml
Egg 1
Sugar 25g
For the sugar syrup
Sugar 50g
Water 100ml
Method :
Mix wheat flour . yeast and salt together. Add condensed milk, egg and sugar and mix it well.Add the margarine to the mixture.Add the water gradually and kneed the dough for about 50 minutes. Then divide the dough to 4 pieces and roll the each piece.Cut the roll in the middle and keep aside.Cover all the pieces with a damp cloth and keep it to bloom for 20 minutes. This process is call 'intermediate processing'.
After 20 minutes roll the each piece using a rolling pin and make a triangular from one corner. Dust some flour to prevent sticking.Then starting form the triangular side , roll the dough to the opposite side by holding from that side. The result is crocodile - like log with more dough in the middle.Cover with a plastic wrap and keep for 10 minutes.
Make a sugar syrup using sugar and water.Apply the sugar syrup on top of the bun and roll it in the granulated sugar.Keep for another 10 minutes and bake in a pre heated oven at 200C temperature for 20 minutes. Serve it in hot.
