Arabic Chicken Shawarma




Shawarma is a Middle Eastern dish of meat and salads served on tortillas or pita bread. You can use any meat such as Chicken , Beef etc.This is a perfect dish for a main meal or as a on the go snack.Today's recipe is about making Chicken Shawarma. 

Ingredients :

For Tortillas 

All purpose flour  - 500 g
Baking Powder  - 2 Tsp
Warm water - 300 ml
Salt  - 1 Tsp
Olive oil - 4 Tbsp

For the  Chicken Filling

Boneless chicken - 500 g
Chili powder - 2 Tsp
Turmeric powder - 1/2 Tsp
Black pepper - 2 Tsp
Masala powder -5 Tsp
Garlic and ginger paste - 2 1/2 Tsp
Cumin seeds - 2 Tsp
Cloves and Cardamom - 6
Cinnamon powder - 1 Tsp
Lime Juice - 4 Tbsp
Salt - 1 Tsp
Curd - 1/2 cup


For The Salad

Red or green bell pepper 
Tomatoes
Carrot
Cabbage
Olives
Lettuce
Tahini sauce or Mayonnaise  - 4 Tbsp
Tomato sauce - 4 Tbsp


Method :

Tortillas

In a bowl mix flour, baking powder,salt and oil. Then mix the dough by gradually adding water.Kneed the dough for about 5 minutes and cover the bowl with a damp cloth.Keep it for 15-20 minutes until it rise.After 20 minutes cut the dough into 12 pieces and make balls. Keep it for another 5 miniutes. After that roll it using a rolling pin and make the perfect round shape. Greece the pan with some oil and place the each tortilla on the pan. Heat it for 45 seconds and turn it to other side. Repeat for other tortillas as well. If it baked perfectly there should be light brown spots on the tortillas. cover with a serviette until it use to maintain the softness.


Chicken Filling

Cut the chicken into small pieces and mix chili powder, turmeric powder, masala powder ,olive oil , curd and lime juice.Mix all the ingredients properly. Refrigerate for few hours to marinate the chicken well.Heat a pan with some oil and add cumin seeds, cloves and cardamom, cinnamon powder, ginger garlic paste and marinated chicken mixture. Cook for  10 minutes.


Salad

Chopped all the vegetables.Heat a pan and fry the carrot and cabbage lightly. Mix all the chopped vegetables except lettuce.Add salt , pepper, olive oil and mayonnaise sauce to the taste.


Take a tortilla and apply some Tahini sauce or Mayonnaise sauce.Place some lettuce on top of the tortilla.Add a little bit of salad and chicken mixture. Roll the tortilla and put a toothpick or roll it by a oil paper.Repeat for other tortillas as well.Serve with some tomato sauce.
